I have been known to sneak veggies in from time to time. Little things like pureed squash in the mac & cheese, cauliflower mashed in with the potatoes, carrots in the spaghetti sauce. But for this dish, I never need to hide. In fact, my daughter asked, “Why are you picking this as the vegetable of the day? We love to eat it!” That about sums it up. So what is this mystery vegetable? Rhubarb. We only know one way to fix it, we lovingly refer to it as Bluebarb Crisp. Yes, blueberry-rhubarb crisp. Admittedly it’s a stretch, but when I have a freezer full of rhubarb, I figure it counts. Why not?
This next week’s menu is loaded with new veggies, however. And, in more legitimate dishes than dessert.
