Kate’s World Famous Soup

A while back Kate came up with a recipe for her World Famous Soup. She asked to make it that day and we’ve made it a few times since. It’s one of those, clean-the-fridge-out soups where you just toss in everything. That worked perfectly for tonight. Our official veggie was green beans, but we added onion, potato, tomatoes, carrots, celery, parsley, bay, peas, and corn. I tried to put some kidney beans in, but she vetoed that.

The best part of making the dinner was not that she helped me, though that was fun. It was the fact that she got into this “restaurant” state of mind. She wanted our dinner to be like a restaurant so after setting the table, she decided she should tidy up a bit since restaurants are always neat and tidy. What a great idea!

She’s probably my best vegetable eater anyway, and she’ll enjoy her World Famous Soup for lunch tomorrow. Incidentally, if you ever see a restaurant named Soups Soups Galore in the future, that may be my girl!

One more thing: my husband was a little surprised to find his "burrito" for lunch today was just lettuce in a tortilla. He was convinced I'd taken this experiment a little too far. Then, thankfully, he found the rest of the ingredients.
