Day Two

First off, I want to clarify that vegetables are not foreign to my family. We do cook with quite a variety of veggies and the photo below is a sample of what we’ve grown in our garden. The gimmick is to entice them to try more vegetables and hopefully like them. It’s amazing the lengths we’ll go to isn’t it?

In spite of protests, cole slaw was on the menu today. I recently found a really good recipe so I’m game to make it more often. The food of the day, however, was beets. I admit, I think I’ve only served my family beets once. Mostly that is due to the staining quality of their juice. I like them. I don’t think I’ve ever bought them fresh, however. So this was new all around. They were slightly wilted from sitting on the counter a little too long, but cooked up nicely. No frills, no fuss, just boiled with a little salt. Pretty tasty.

The girls both ate them and Kate even liked them. (We did tell them the were kind of like red carrots.) Jackson wasn’t around to try them so he’s off the hook. I’m thinking of pureeing the leftovers for the baby. She should be in on the challenge as well. I’m not sure I could find 30 veggies that are completely baby-friendly so she may have to expand to fruits as well. But she could use some more variety as well. So I’ll start a baby tally.

  1. Probably too late now but saving the beet juice from cooking them can make a great natural dye for Easter eggs.

  2. Funny you mentioned that. I told the girls beet juice was used as a natural dye. Didn't think of using it for eggs.
