Today is the first day of our challenge. With our family going a few different directions for dinner, we opted to use lunch as the target meal today. The vegetable: celery. Now, my children have had ample opportunities to eat celery, but usually pass. Today my girls each ate one celery stick to qualify for their gold star. My son tried. He chewed a bite and promptly spit it back out. At least he tried.
I’m already meeting resistance. When discussing the menu for tomorrow, my eldest daughter exclaimed, “I hate cole slaw!” Hmm…should I rethink tomorrow’s target veggie?
Other veggies today: carrots, tomatoes, lettuce (plus I had garlic, onions, peppers, cucumber and several fresh herbs for my Relief Society dinner tonight. Yummy!)

Don't get discouraged if they don't like something... sometimes I find that my kids love beets one day, and they refuse them a week later. I always try again, though, and sometimes they eat them and sometimes they don't!
ReplyDeleteToo bad garbanzo beans aren't a vegetable. Your hummus was great! So what day are beets? I loved beets as a kid because they were sweet and matched my favorite color crayon - magenta. I have looked for the recipe without luck but had whipped beets at a dinner catered by Marriott. They were fantastic! I was thinking my kids would like that. Love your blogging idea!

ReplyDeleteTami, I know kids are finicky. That's why I keep serving them the things I like. One day, they may even ask me for the recipe. Who knows?
